Recipe (3-4 servings, freeze leftovers):
3-4 scallions
1 zucchini
3 violet carrots
1 mini brokkoli
1 mini cauliflower
205-400 ml coconut milk
a few slices fresh ginger
olive oil, sea salt, turmeric powder
1 cup quinoa
Cook quinoa according to directions on the package
Cut veggies in slices and sautee in olive oil, add some water and sea salt and boil lightly until tender, then add coconut milk (amount depends on your taste for a creamy consistency) and turmeric.
Mix quinoa and veggie curry.
